The Le Creuset pie bird is hollow enameled stoneware that vents steam up and out of the filling as the pie bakes, so the bottom crust stays crisp, the filling doesn't boil over, and the top crust holds its shape. Set it in the center of the filling before adding the top crust, then trim around it.
