Wusthof ® Universal Hand-Held Sharpener

One sharpener for the whole knife block.

Wüsthof's Universal Hand-Held Sharpener switches between a Standard setting and an Asian setting, and each setting has two stages, four in all. Draw the blade through the carbide slot to smooth out irregularities and refine the edge angle, then through the ceramic slot to hone it to a finished edge. Wüsthof sharpens its standard knives at 14 degrees per side and its Asian-style blades, like santokus and nakiris, at 10.
