Nogent's Mini Santoku is a compact, versatile paring knife handcrafted in the Biesles workshop in France. The ultralight build and precise, hand-ground blade make short work of trimming, slicing, and chopping small tasks, and the handle is turned from French PEFC-certified hornbeam, air-dried a full year before machining for a warm, close-grained finish.
