This banneton, or brotform, cradles softer, higher-hydration dough while it proofs, giving the loaf the structure and support it needs to hold its shape before baking. Hand-crafted from Indonesian palmwood rattan, its coiled interior, along with a dusting of flour, presses a beautiful artisan pattern into the crust. A removable cotton-linen liner lets you switch to a smooth finish.
