The No.08 is the knife that started Opinel: Joseph Opinel patented it in 1890 for the farmers and railmen of Savoie, and more than 30 million have sold since on the strength of a simple, honest design. An XC90 carbon steel blade takes a wickedly sharp edge, locked into a varnished beechwood handle that settles into the palm.
