Shun's Classic Santoku moves through vegetables, proteins, and fruit with the same easy precision, its wide blade and gently down-sloped tip built for quick, clean prep. A VG-MAX core clad in 34 layers of Damascus on each side takes a lasting 16-degree edge and gives the Classic line its flowing wood-grain look, and the D-shaped ebony PakkaWood handle fits the curve of the hand.
Two sizes
- 5.5" falls between Shun's small and full-size santoku. Best for cooks with smaller hands, or medium tasks: fruit at breakfast, mincing herbs, slicing chocolate or butter. Some use it in place of a paring knife.
- 7" is the traditional full-size santoku, the everyday workhorse for prep at scale.
